Based on a Shrewsbury ‘cakes’ recipe from the 1700s that Jane may have tasted or used.
These can be made with a Jane Austen 3D printed cookie cutter of about 6 cm (2 1/2 inch) round.
This recipe makes a sweet, crisp cookie which keeps well. Roll thin and do not over bake and enjoy!
This recipe makes about 22 – 28 cookies
125 g butter
150 g caster sugar
2 egg yolks
260g plain flour
1/4 tsp Ground Cinnamon
grated rind of an orange or lemon
Preheat oven to 180 C (170 C fan oven)
Lightly grease baking sheets
Cream butter and sugar until they are pale and fluffy.
Add the egg yolks and beat well.
Stir in the flour and grated lemon or orange zest and mix to a fairly firm dough.
Turn out on to a lightly floured surface and knead before rolling to a thickness of 1/4 inch or 5 mm.
Use your Jane Austen cookie cutters or cut into shape (or any shape you like)
Bake for 12–15 minutes until firm and lightly coloured. Do not over bake.
Cool on a rack. If not eating immediately, store in an airtight container when cool. They keep well and stay crisp.
